Instructions
- Prepare the Batter: Mash the ripe bananas in a mixing bowl until smooth with some lumps remaining for texture. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt. In another bowl, mix the mashed bananas, egg, milk, oil, and vanilla extract. Pour the dry ingredients into the wet ingredients and gently stir until just combined.
- Cook the Pancakes: Heat a nonstick skillet over medium heat and add a little oil or butter. Pour 1/4 cup of the batter onto the hot skillet for each pancake. Cook for about 2-3 minutes until bubbles form on the surface and edges are set. Flip and cook for another 1-2 minutes or until golden brown.
