For the Ribs:

  • 2 racks Baby Back or St. Louis-style ribs
  • 2 tablespoons paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt

For the Sauce:

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon cayenne pepper (optional)

Instructions

  1. Prep the Ribs: Preheat your oven to 300°F (150°C). Remove the membrane from the bone side of the ribs. In a bowl, mix the paprika, brown sugar, garlic powder, cumin, black pepper, and salt. Rub this mixture evenly over both sides of the ribs.
  2. Cook the Ribs: Wrap the ribs tightly in aluminum foil and place them on a baking sheet. Bake for 2.5 to 3 hours, or until the meat is tender and pulls away from the bone.
  3. Glaze the Ribs: Remove the ribs from the oven and increase the oven temperature to 350°F (180°C). Unwrap the ribs and brush with barbecue sauce. Return to the oven, uncovered, for an additional 15-20 minutes to allow the sauce to caramelize.
  4. Serve: Cut the ribs into individual pieces and serve with extra sauce on the side.
