  • Salt and freshly ground black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter

For the Marsala Sauce:

  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 3/4 cup dry Marsala wine
  • 3/4 cup low-sodium chicken broth
  • 1/4 cup heavy cream (optional, for a creamy version)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the Chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/3 inch. Season both sides with salt and pepper, then dredge in flour, shaking off the excess.
  2. Sear the Chicken: Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
  3. Make the Marsala Sauce: In the same skillet, add the sliced mushrooms and sauté for about 5 minutes until they are golden brown. Add the minced garlic and chopped shallot, cooking for an additional 1-2 minutes until fragrant.
  4. Finish the Sauce: Pour in the Marsala wine, scraping the bottom of the skillet to release any browned bits. Let the wine reduce by half, then add the chicken broth and simmer for 5-7 minutes until slightly thickened. For a creamier sauce, add the heavy cream at this stage and stir until well combined.
  5. Combine Chicken and Sauce: Return the chicken breasts to the skillet and spoon the sauce over them. Cook for another 3-4 minutes until the chicken is fully coated and heated through. Garnish with freshly chopped parsley before serving.
