Instructions
- Prep the Chicken: Preheat your oven to 400°F (200°C). Pound the chicken breasts to an even thickness.
- Coat the Chicken: In a shallow dish, mix the Panko breadcrumbs, grated Parmesan, garlic powder, and oregano. Dip the chicken breasts into the beaten eggs, then dredge them in the breadcrumb mixture, pressing to adhere.
- Pan-Fry the Chicken: Heat olive oil in a large skillet over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes per side until golden brown. Transfer the chicken to a baking dish.
- Bake the Chicken: Spoon marinara sauce over each chicken breast, then top with shredded or sliced mozzarella cheese. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).
- Cook the Pasta (Optional): While the chicken bakes, cook the pasta in salted boiling water according to package instructions. Drain and set aside.
- Serve: Plate the Chicken Parmesan and serve it over a bed of pasta if desired. Garnish with fresh basil and extra Parmesan cheese.
