  • 1 tablespoon Worcestershire sauce
  • 1/2 cup beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Mashed Potato Topping:

  • 2 pounds Yukon Gold or Russet potatoes, peeled and quartered
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Optional: 1/2 cup grated parmesan or cheddar cheese

Instructions

  1. Prep the Potatoes: Boil the peeled potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Mash with butter and heavy cream until smooth. Season with salt and pepper. Set aside.
  2. Cook the Filling: Preheat your oven to 400°F (200°C). In a large skillet over medium heat, cook the ground lamb or beef until browned. Add the chopped onion, garlic, carrots, and celery, cooking until the vegetables are tender.
  3. Season the Filling: Stir in the tomato paste, Worcestershire sauce, thyme, and beef broth. Season with salt and pepper. Simmer for 10 minutes, or until the mixture thickens.
  4. Assemble the Shepherd’s Pie: Spread the meat mixture evenly in a baking dish. Carefully spoon the mashed potatoes over the filling, spreading it into an even layer. Use a fork to create peaks on the surface for added texture. Sprinkle with grated cheese if desired.
  5. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and the filling is bubbling.
