Ingredients
Scale
For the Filling:
- 1 1/2 pounds ground lamb or beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup frozen peas
- 1 stalk celery, finely chopped
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1/2 cup beef broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Mashed Potato Topping:
- 2 pounds Yukon Gold or Russet potatoes, peeled and quartered
- 1/4 cup butter
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional: 1/2 cup grated parmesan or cheddar cheese
Instructions
- Prep the Potatoes: Boil the peeled potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Mash with butter and heavy cream until smooth. Season with salt and pepper. Set aside.
- Cook the Filling: Preheat your oven to 400°F (200°C). In a large skillet over medium heat, cook the ground lamb or beef until browned. Add the chopped onion, garlic, carrots, and celery, cooking until the vegetables are tender.
- Season the Filling: Stir in the tomato paste, Worcestershire sauce, thyme, and beef broth. Season with salt and pepper. Simmer for 10 minutes, or until the mixture thickens.
- Assemble the Shepherd’s Pie: Spread the meat mixture evenly in a baking dish. Carefully spoon the mashed potatoes over the filling, spreading it into an even layer. Use a fork to create peaks on the surface for added texture. Sprinkle with grated cheese if desired.
- Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and the filling is bubbling.
