- 8 small flour tortillas (or corn tortillas if you prefer)
- 8 large eggs
- 12 oz chorizo sausage, casings removed
- 1 tablespoon unsalted butter
- 1 avocado, diced
- 1 cup shredded cheddar cheese
- Salsa or pico de gallo (optional)
- Cilantro for garnish (optional)
Instructions
- Preheat your oven to 300°F. Wrap the tortillas in foil and place them in the oven to warm.
- In a skillet, cook the chorizo over medium heat until browned and cooked through.
- In a separate bowl, whisk the eggs until well combined. Melt the butter in a nonstick skillet over low heat, then add the eggs. Stir frequently until the eggs are scrambled but still soft and creamy.
- Assemble the tacos by placing a portion of chorizo and scrambled eggs on each tortilla. Top with cheese, avocado, salsa, and cilantro. Serve immediately.
